Emotional responses to food aromas are complex, unconscious and difficult to quantify solely through self-reports. The study, published in the journal Food Quality and Safetyinvestigated how to inhale aromas of four citrus essential oils (navel orange, blood orange, huyou and grapefruit) affects human emotions. By integrating smart sensory technologies, such as electroencephalography and autonomic nervous system monitoring, with advanced flavoromics analysis, the team captured both conscious and unconscious emotional responses.

This multidisciplinary approach allowed researchers directly connect changes in physiological signals related to mood with specific aromatic compounds in citrus essential oils.

Participants exposed to citrus aromas showed clear signs of emotional relaxation compared to a deliberately unpleasant odor used as a control. Physiological data revealed reduced skin conductance and a lower ratio of low- to high-frequency heart rate variability, indicating increased parasympathetic activity commonly linked to positive and calm emotional states.

Brain recordings also demonstrated an increase in power in alpha and delta waves.particularly in the frontal and parieto-occipital regions associated with emotional regulation.

But not all citrus aromas produced identical effects. Navel orange, blood orange, and grapefruit elicited stronger positive emotional signatures than huyou (a sour orange grown in China), reflecting differences in its chemical composition. Brain asymmetry analysis showed that These three oils enhanced the predominance of the left hemisphere in regions related to emotions, a neural pattern frequently associated with approach behavior and positive affect.

Flavoromic analysis identified more than sixty active aroma compounds, but only a few were consistently correlated with emotional benefits. By integrating neural, physiological, and chemical data, researchers identified four key mood-enhancing molecules: d-limonene, linalool, a-terpineol, and geranial. These compounds were strongly associated with reduced stress indicators and increased neural markers of positive emotion, providing molecular-level evidence linking citrus aroma chemistry with emotional outcomes.
